Margarita Cupcakes

It's that time of year again for festive margaritas! Impress your friends with these delicious cupcakes and your Cinco de Mayo party or for your friends birthday. This year my friends 24th birthday was at a taco restaurant so I thought these cupcakes were the perfect way to celebrate (plus I love any excuse to bake).

Ingredients:
For the Cupcakes:
1 1/2 cups all-purpose flour
1 1/2 t baking powder
1/4 t salt
1/2 cup (1 stick) butter, softened
1 cup sugar
2 eggs
1 1/2 limes (zested and juiced)
2 T tequila
1/4 t vanilla extract
1/2 cup buttermilk
*additional 2 T tequila
For the Icing:
1 cup (2 sticks) butter, softened
2 3/4 cup powdered sugar
1 T lime juice
2 T tequila
Directions:
Preheat oven to 325 degrees and line muffin pan with paper liners.
In a bowl, mix together dry ingredients (flour, baking powder and salt)
In a stand mixer, cream together to softened butter and sugar until light and fluffy.
Add the eggs to the mixer one at a time until well combined. Then add the lime zest and juice, vanilla extract, and 2 T tequila.
Reduce the mixer speed and alternate between adding the dry ingredients and the buttermilk until well combined. Do not over mix.
Evenly pour the batter into the lined muffin pan and bake for 20-25 minutes, or until a toothpick comes out clean, and allow to cool.
Brush the tops of each cupcake with tequila (1 - 2 T tequila total).
While the cupcakes cool, it's time to make the icing. Start by whipping the softened butter in your stand mixer with the whisk attachment. Slowly add in the powdered sugar (scraping the sides as needed. Add the lime juice and tequila and whip until fluffy.
Frost the cupcakes and garnish if desired with lime wedges, coarse salt, and/or lime zest.
