Crunchy Cauliflower Salad

Inspired by a salad from Whole Foods, this Crunchy Cauliflower Salad is a perfect side dish to compliment any meal or it can stand on it's own for a tasty afternoon bite. With only a few ingredients, it is quick to throw together but it remains bold with a unique combination of flavors.
Prepare a full batch at one time and have enough for the whole week or serve this unique salad at your next get together to get everyone asking for your recipe. Remember you can always have a little fun and play with the ingredients - I used dried apricots and pistachios, but the salad would also be delicious with a combination of dried cranberries with almonds as well.

Crunchy Cauliflower Salad
Yield: about 8 (1/2 cup servings)
Ingredients:
1 head cauliflower
1/4 cup fresh mint
3/4 - 1 cup shelled pistachios
1/2 cup dried apricots
1/2 cup olive oil
1/3 cup fresh lemon juice
1/4 t salt
1 t tarragon
Directions:
Use either a food processor to prepare the head of cauliflower or grate it into a bowl. Add a splash of water to the grated cauliflower and microwave for about 2 minutes to slightly soften.
Roughly chop the mint, pistachios, and dried apricots. Fold them all into the cauliflower until evenly combined.
To make the dressing, whisk together the olive oil, lemon juice, salt, and tarragon. Pour over the salad and mix well to fully coat all of the ingredients.
Serve and ENJOY!
