Sweet Potato Gnocchi

Have you ever thought about making home made gnocchi? I can tell you that I have thought about making them numerous times, but they have always seemed too daunting to attempt. But I was wrong!! I'm not going to lie, these little buggers did take some time to prepare, but . . . it is worth it. Plus the cooking time as minimal so you can easily start cooking your side dishes while preparing this recipe.
I recommend starting to prepare this dish with plenty of time before serving to optimize the flavor from the sweet potatoes by roasting them in the oven until tender. If you are a little more pressed for time, you can quickly microwave the potatoes for about 5 minutes or so until soft. Another tip is patience while kneading the gnocchi dough. I did this part by hand rather than a mixer with a dough hook and it took about 10 minutes to make perfectly mixed and smooth. Using a dough hook could definitely save some time in the kitchen if needed.
Great ideas of what to serve along side the gnocchi would be brussels sprouts, broccoli, asparagus, mixed salad, sear chicken, or what ever else your heart may desire. These deep orange gnocchi sure do look great with the bright green vegetables too!

Sweet Potato Gnocchi
Serving ~6
Ingredients:
2 medium sweet potatoes
1/2 grated parmesan cheese
1 egg
2 cups flour
4 T butter
8-10 sage leaves, sliced
Freshly Grated Parmesan to garnish
Directions:
Prepare the sweet potatoes by roasting in a 400 degree oven for about 40 minutes until tender, or microwave for about 5 minutes until soft. Roasting is recommended to obtain the most flavor.
Peel the skin off of the potatoes and mash into a smooth consistency. Once smooth, mix in the parmesan cheese and a beaten egg.
Slowly mix in about 2 cups of flour (may vary each time you make this recipe) and knead the dough until fully incorporated, smooth, and no longer sticky.
Roll this dough into 1/2" strips and then slice into 1/2" portions. This will create your gnocchi shape. *Tip: roll the gnocchi along the prongs of a fork to get a more traditional shape at home.
Boil the gnocchi for about 2-3 minutes or until they float to the top. Drain the water.
In a sauce pan, add the sage leaves and butter. Once the butter begins to brown, add the cooked gnocchi and saute until lightly browned.
Serve with your favorite sides and ENJOY!
