Lemon Dream Bars

Don't worry, you aren't dreaming, you read the tittle right . . . LEMON DREAM BARS! This has to be one of my favorite desserts growing up, the go to dessert my mom would make, and one of my favorite family recipes that I have been blessed to have passed onto me. This dessert is the perfect balance between sugary sweetness and the gentle sour flavor of fresh squeezed lemons.
Every time I make this simple treat for friends and coworkers they are asking for more. I have made this recipe two nights in a row now in order to share it with all my close friends, but it seems to keep magically disappearing out of my fridge over night. But good thing these bad boys are easy to mix up. They take about an hour between prep, bake time, and clean up -- but most of that time is just patiently waiting for the goodies to bake (perfect time to mix up a nice cocktail or a soothing cup of tea).
As long as your keep lemons in your kitchen at all times as I tend to do, you can probably make these special treats without even needing a trip to the grocery store! Try the recipe and let me know what you think :) This is one family recipe that I am happy to share.

Lemon Dream Bars
Yield: 16
Ingredients:
Crust-
1 cup All-Purpose Flour
1/4 cup Powder Sugar
1/2 cup (1 stick) Butter, room temp or softened (not melted)
Filling-
2 Eggs
1 cup Sugar
2 T Frech Lemon Juice
3 T All-Purpose Flour
1/2 t Baking Powder
Directions:
Preheat oven to 350 degrees.
In a medium mixing bowl, combine all the crust ingredients (flour, powder sugar, and butter). You can do this with a pastry blender or just get in there with your hands. The mixture will be crumbly, not smooth.
Pat the crust mixture into the bottom of an 8x8 glass baking dish and pack down evenly. Bake for 13-15 minutes.
While the crust bakes, mix the filling in a medium mixing bowl by whisking together all filling ingredients (eggs, sugar, flour, lemon juice, baking powder).
Once the crust bakes for about 15 minutes, pour the lemon mixture on top and bake for an additional 20-25 minutes. Keep an eye on the bars near the end as every oven bakes a little different.
Remove them from the oven and allow to cool, dust with powder sugar, cut into 16 squares and serve.
