Zesty Broccoli Rotini

Another comfort food recipe for the books for a busy week night dinner. If you've been reading my posts so far you have probably caught on to the trend that I love quick and simple dishes that aren't lacking in flavor like other standard weeknight meals. I probably whipped this recipe up within 20 minutes including prep, cooking, and clean-up! Now we all have that kind of time any night of the week. Since starting my dietetic internship recently, my schedule has been less predictable than usual so being able to prepare dinner quickly is essential some nights of the week when I get off later than usual, but just because it is a quick dish doesn't mean I'm okay with bland meals. This pasts dish is packed full of flavor with the zest of lemon and the kick of red chili flakes. Let me know what you guys think!
Zesty Broccoli Rotini

Yield: about 8 servings
Ingredients:
1 box of rotini (1 lb)
3 cups of broccoli florets
4 cups fresh spinach
1 Lemon
3 cloves garlic
1/2 t red chili flakes
Salt and Pepper to taste
Garnish: Freshly Grated Parmesan and Lemon Wedges
Directions:
Bring lightly salted water to a boil over high heat.
Add rotini and cook for about 3 minutes.
Add broccoli and cook for an additional 4 minutes then drain in a colander and return to pot.
Stir in spinach, minced garlic, the zest from one lemon, the juice from 1/2 a lemon, red chili flakes and salt and pepper. Stir until the spinach is wilted and the ingredients are well combined.
Serve with fresh parmesan and lemon wedges.
