French Toast Casserole

Most of the time I try to keep my breakfast the healthiest meal of my day to kick off a great start to everything the day brings. However, special occasions sometimes call for rule breaking! And that bring me to French Toast Casserole. This was one of my favorite things about Christmas Mornings, family birthdays, and just the random sweet tooth morning. Come on... I know we all deserve our cheat day and this is it.
For this dish it is best to prep the night before and just throw it in the oven in the morning. This allows for the bread to soften and absorb all the rich flavors; and it also leads itself into an easy morning with no prep and little clean up.
French Toast Casserole

Yield 8-12
Ingredients:
1 cup brown sugar, packed
1 stick butter
2 T corn syrup
Bread (stale french bread works best, about 3/4 loaf)
6 eggs
1 1/2 cups low-fat milk
2 t vanilla extract
3/4 t pumpkin spice
Topping ideas: fresh berries, bananas, whipped cream, fruit compote, like your imagination run wild
Directions:
Prepare the dish the night before.
In a medium sauce pan, melt the butter, brown sugar and corn syrup. Stir constantly to prevent burning and clumping. Remove from the heat once melted and pour into a greased 9x13 baking pan.
Prepare the bread by removing the crust and cutting into 1" cubes. Top the brown sugar mixture with the cubed bread.
In a small mixing bowl combine the eggs, milk, vanilla, and pumpkin spice. Once completely mixed, pour mixture over the cubed bread. Gently press the bread into the mixture until moistened.
Cover. Refrigerate. Enjoy your night!
On the morning of, preheat the over to 350 degrees. Uncover the casserole and bake for 28-32 minutes or until the top of the bread cubes become golden brown.
When serving, cut the casserole into servings and serve individually upside-down (brown sugar side on top). Top with whipped cream and fresh fruit or whatever else your heart desires.
